Marion's Boiled Fruit Cake



Marion's Boiled Fruit Cake 

Ingredients:
1 kilo mixed dried fruit (if it includes cherries cut them into small pieces)
125 grams margarine
one large coffee mug brown sugar
2 eggs
2 large coffee mugs S.R. wholemeal flour
half mug water
teaspoon bicarbonate of soda
cinnamon
wine or spirits

Method:
Soak dried fruit in bowl with about half mug of wine, spirits or whatever available for several hours or overnight. Heat oven to 150 degrees and prepare cake tin by lining with three layers of foil.

Combine fruit in saucepan with sugar, margarine and water. Heat gradually to boil and cook for several minutes. Remove from heat. Dissolve bicarb. soda in small amount of water and add to mixture, stirring as it froths. Leave to cool. 

Beat eggs and add to mixture then gradually add flour. Mix well and add to tin. Cover loosely with foil. Bake in moderately slow oven for about two hours. Test with fine wooden skewer to see if cooked. Allow to cool in tin. Keeps well if not eaten immediately...
